Gabrielle Rubinstein, Co-owner of Joe, a group of coffee bars in NYC and Philadelphia. Joe was founded in 2003 by Gabrielle and her brother , first as a specialty coffee house located in Manhattan’s west village and today the group has 10 locations.

Black if drip coffee or a cortado or macchiato in the afternoon.

Do you enjoy having your coffee with pastry alongside, and if so, what is it?
i try to stay away from pastry, but if on holiday, it would be a croissant.
Do you have a favorite Single-origin coffee?
I tend to prefer coffees of the Americas in the morning because they are just accessible, but after that first cup, I’m ready for an African.
What was the most unusual or experimental coffee you tasted?
Probably a natural processed Ethiopia, but I don’t recall the exact one.
What is your favorite coffee shop and what makes it enjoyable?
Besides my own, Joe, I love Everyman Espresso because they elevate the coffee with reverence and sophistication.
From your experience, what is the most important factor when it comes to making good coffee?
Fresh, light to medium roasted beans, of course.
